How to be a healthy vegetarian?
Try cooking meals from fresh ingredients rather than eating prepackaged foods. Try pastas, you can eat huge portions of pasta with tomatoes and fresh veggies without getting a ton of calories. It is also really quick to make. Vegetables often last a lot longer than sell bys. If the colors are still bright and it is not mushy it is good. One of my favorite quick meals is beans and corn, put 1 can of beans and a bunch of frozen corn together, microwave until corn is not frozen, add chopped up tomatoes, green beans or parsley, and garlic. Put in salt, pepper, and whatever other spices you like. It lasts forever in the fridge, has a ton of protein and is almost fat free. You can also freeze bean or lentil curries and they will keep for months. I read somewhere that you should eat 10 X your bodyweight in calories to maintain weight so 200 lbs is 2000 calories 100 lbs is 1000 calories.
